DEEP FRYING

 

These are the tips to make best result deep fried food.

 

Keep proper oil temperature.

Exceeding proper oil temperature causes the burn on outside of food material before inside is cooked. Frying at not enough temperature makes food greasy. The ideal temperature for deep-frying is 160°C (320°F) ~ 185°C (365°F) depending on the size of materials.

 

Always fry proper size of materials at the same time. The proper size of materials is depended on the size of your fryer. It's very important to maintain frying oil temperature; frying too much food all at once reduces the oil temperature and causes the greasy taste of food.

 

Use cold water to make Tempura batter; the lumpy batter is appropriate shape, don’t need to beat it too much.
